Predictive microbiology is based on complex scientific studies conducted on biological material to investigate microbial development. For companies applying this system, it is a fundamental task conducted on both the microbiological and technological aspects of products.
The aim is to prevent the development of undesirable microbes particularly those aimed by European regulations are listeria and salmonella.
To enhance food security of its raw products in regards of Listeria, Salaisons Bentz has worked with predictive microbiology. This study received support and experience of an expert laboratory. It required 2 ½ years of work. After upgrading the manufacturing processes, and without the use of additives, the analyzes show that Listeria monocytogenes is not growing up in the raw products of Salaisons Bentz.
