A whole ham will feed 40 to 60 people depending on whether it is served with other dishes or as the main dish.
Heating a ham
Heat your ham in the oven. wrap it in aluminium foil, or baste it regularly. Allow 20 to 25 minutes per kilogram of ham, gas mark 3 (80°C).
Cooking a fresh salted ham
- In the oven : wrap it in aluminium foil, or baste it regularly. Allow 30 minutes per kilogram of ham at gas mark 7 (210°C) to start with, lowering the temperature gradually.
- On the barbecue : baste regularly. Allow 30 minutes per kilogram of ham.
- Poaching : allow 30 minutes per kilogram of ham, keeping the poaching liquid at 90°C.
Storing a raw smoked product
Wrap the product well in a cloth and put it in the refrigerator.
